Cabbage Aavaa Pettina Koora Preparation Method

A delicious cuisine from andhra pradesh that can be served along side rice and rotti is this interesting cabbage curry. Here is the simple menu to prepare this cabbage curry
Ingredients Needed
Cabbage – finely chopped
Green chillies – 2
Jeera – 1tsp
urad dhal – 1 tsp
channa dhal – 1 tsp
oil – as needed
water – as needed
salt – as needed
curry leaves – 1 string
Raw mustard and red chillies – finely ground. Don’t roast them
tuemeric – 1 tsp. This can be replaced with piece of ginger as well
Method of preparation
1) Boil cabbage with salt and turmeric
2) Heat oil in a pan and add green chillies, jeera,urad dhal, channa dhal
3) Add cabbage and mix well
4) Add mustard+red chillie powder, curry leaves
Serve hot with rice/roti

Cauliflower/cabbage podimas curry preparation

Podimas is a unique form of sidedish that can be used alongside rice, breads like chapathi,naan,paratha etc.Podimas can be made using egg. In case of vegeterians cabbage,cauliflower can be used for preparing podimas
Inredients needed
salt – as needed
cauliflower/cabbage – finely chopped one cup
corriander powder – 1tsp
red chilli powder – 1 tsp
onion – 1 cup finely chopped
jeera – 1/2 tsp
oil as needed
Method of preparation
1) Heat oil in a pan and add jeera
2) Add onion and add salt to taste. Add red chillie powder,corriander powder
3) Add cauliflower/cabbage and add plenty of water
Mix well to prepare podimas. Serve hot

How to prepare idli/dosa batter

rice – 3 cups
urad dhal – 1 cup
water – as needed
Method of preparation
1) Soak rice and urad dhal separately in water for about 6 hours. Mor you soak great is the taste
2) Grind urad dhal and rice separately
3) Add salt and mix well
4) Mix using hand so that mixing and fermentation ahppens good
5) Keep it in oven to increase rate of fermentation

Potato – 1 cup
Pattai/lavanga pattai – 1
Brinji leaves/biryani leaf – 1
green chillies – 4 – as needed
sombu/fennel seeds/perunjeeragam – 1 tsp
garlic – as needed
onion – as needed
tomato – as needed
salt – as needed
Sambar powder – as needed
Method of preparation
1) Cut and boil the potatoes. Add sambar powder to boiled and smashed potatoes
2) Heat oil in a pan. Add brinji leaf,sombu,pattai,garlic,onion, tomato
3) Add the potato to the deep fried mixture
4) Add salt to taste

tamarind juice – 1 cup
salt – as needed
water – as needed

1) Heat oil . Add more oil for good taste
2) Deep fry fennel seeds, curry leaves, garlic,onion. Add the chopped vegetable
3) Add tomato and sambar powder
4) Add tamarind juice and water
5) Boil well until oil oozes out
6) Add salt to taste

Coconut flaks - 1 cup
Besan flour - 1 tumbler - It needs to be raw and no need to fry this

2) Note that we only add milk and no water
3) Now add ghee slowly so that it separates out like mysore baag
4) Slice and server hot/cold

Jigar – Heart Thanda – Cool.It is a famous health drink in South India, Madurai(Temple City).It is a cool, sweet health drink prepared from milk, badam, icecream, rose syrup(Nannari/sarbath mix – usually yellow in colour can be a good replacement).

Badam – Soak it in water for more than 6 hours and make it a fine paste
Ice Cream – 2 cups
Rose Syrup/Nannari Syrup – as needed

Beat well and add rose syrup
Serve cool to face the heat
